Seat Belt Mount

I have stripped my Pinz down to paint it, everything is off except doors and windshield, does anybody have an idea for mounting the seatbelt shoulder harness to make the truck street legal without the roll bar installed?
I may drive it with an open cab this spring after I paint it.

I did the same thing when I tore mine down for some painting. I know the shoulder harness adds additional protection, however, to be legal whilst driving around with overhead removed, I simply replaced the OEM belt/harness with an aftermarket lap belt bolted to the lower mounting points of the OEM setup.
